How to cook Goat Meat
 
Cabrito will loose moisture and can toughen quickly due to low fat content if it is exposed to high, dry cooking temperatures. Therefore two basic rules:
 
               1. cook it slowly (low temperature)
               2. cook it with moisture
 
Tenderness of a meat cut determines the method or methods of cooking. Tender cuts of meat are usually best when cooked by a dry heat method such as roasting, broiling or frying. Less tender cuts are tenderized by cooking with moist heat such as braising and stewing.
 
Tender cuts of goat meat are the legs, ribs, portions of the shoulder cut, the loin roast and the breast. Less tender cuts of goat are stew meat, riblets, and shanks. In general, it is advisable to cook the meat slowly. Cooking any meat at low temperatures results in more tender and flavorful product with more juice.

2 Cans Cream of Chicken Soup
Water
Bacon Fat
Salt and Pepper
Salt and pepper chops, then fry in bacon fat until just brown on both sides. Remove chops. On medium heat, put soup in same pan. Gradually add one soup can of water, stirring constantly, picking up the drippings from the chops. Stir for 5 minutes. Place soup and chops in crock pot and cook on high for 5 hours. ENJOY!!
Goat Roast
(Barbecue like)
 
Goat Roast
1qt. canned tomatoes
1/2c. brown sugar
2Tbsp. Worcestershire Sauce
1c. Ketchup
1/2Tbsp. Garlic Powder
3/4c. chopped onions
1tsp. salt
1/2tsp. pepper
 
Mix all ingredients except roast together. I put the frozen roast in the roaster and pour all ingredients in the roaster over the roast. Cover. Set oven for 200 degrees F, and slow cook for 6-7 hours.
 
 
Goat Roast with Sauerkraut

2qt. Sauerkraut
1/2c. Brown Sugar
2Tbsp. Olive Oil
1Tbsp. Garlic Powder
1Tbsp. Onion Powder
1tsp. Salt
1/2tsp. Pepper
 
Mix sauerkraut and brown sugar together in bottom of roasting pan. I lay the frozen roast on top. Cover roast with olive oil, and sprinkle the rest of the seasonings on top of the roast. Cover. Cook at 200 degrees F for 6-7 hours.
